our philosophy

W1 Dining follows one simple recipe;

SLOW-COOKED EXCELLENT DINING

Ingredients

  • 1 heaped cup of fresh, seasonal produce

  • 2 heaped spoons of cheery, polished service (the knowledgeable kind)

  • 1 bowl of enthusiasm & fun

  • a decent knob of butter (or EVOO, your choice)

  • 2 big sploshes of wine (champagne or burgundy if you’re really feeling fancy)

  • a handful of excellent company

  • a teaspoon of good weather (if its in season)

Method

  1. Gather all ingredients together & place in one area.

  2. Slowly add them together, stirring occasionally, until everything is at a smooth consistency.

  3. Once mixed thoroughly, sit aside & wait until the ingredients have matured into a very lovely time.

  4. When everything looks really great, sit back and enjoy your beautiful day!

Born in Victoria, Australia, my younger years started off rurally on a Horse farm and in a small costal town, then moved to New Zealand for high school & university. My parents were smart cooks, grew a lot of their own produce & heavily encouraged the whole family to participate in the production of all family meals. What some consider to be ‘old-school’ cooking, I learnt the fundamental basics of how fresh, seasonal food should be prepared & cooked, developing a great palate from a young age.

Since as young as 14 years old, during weekends & school holidays, I worked in cafe’s & restaurants where I found my love for all things food, wine & service. I was exposed to it all; crazy ingredients I’d never even heard of, diverse cuisines, fast-paced professional kitchen dynamics, high-end wine lists- you name it, I experienced it! I was hooked! Then at 21, I moved back to my ‘roots’ in Australia to further pursue my restaurant career.

Absolutely in love with the industry, I dived head-first into it all. I gained my WSET Sommeliers certificate, got awarded a national Gault & Milau FOH service award & travelled the world experiencing the best restaurants. There’s no doubt about it, my life IS food & wine.

Having worked in some of the best restaurants in Australia & New Zealand, among them being, Riverstone Kitchen, NZ and Coda Restaurant, Melbourne, I have gained invaluable experience in high-end dining.

After 12 years FOH Restaurant Management, I took a move laterally, deciding to try my natural talent in the kitchen. I honed my skills working as a full-time chef in private residence & soon realised creating in the kitchen was my true calling.

In late 2019 my partner, Rob & I, moved to London, only just in time for the world to come to a sudden halt with the COVID-19 Pandemic. I decided to continue to work privately as a full-time chef for an UHNW private residence during this time where I had what I called ‘my own little test kitchen’ to further create & develop dishes & technique.

Now, wanting to blend my FOH & cheffing experience, I’ve created W1 Dining.

With over 17 years of dining experience, I will bring a high level of expertise to you.

Fresh, clean, seasonal ingredients are essential foundations to every meal served by W1 Dining. Eating seasonally & fresh is not only great for the planet but also for our palates.

So naturally, we only source from legendary producers & suppliers who totally get this too! Our Suppliers do the hard work of ensuring that their produce is sourced in season & from sustainable farmers delivering us the best ingredients accessible.
